This Guide is for demonstration purposes and not exhaustive since there are many more substitutions you can make for the various ingredients. For a more complete listing of ingredient substitutions, go to The Gourmet-O-Matic tm Substitutions Guide Page.
Even though all of the many substitutions for the different types of ingredients have not been included, using this simple worksheet, you can make hundreds of different salsas with gourmet flair.
Examples follow the worksheet.
Remember the basic salsa equation:
Salsa = Hot Pepper + Acid + "Mexican" Flavors + Vegetable or Fruit +/- Added Sweet
Legumes are included to demonstrate variations on the representative salsa theme.
Here, again, is a representative salsa recipe:
A representative salsa recipe:
Basic Salsa
4 medium jalapeno peppers (hot)
juice from 1 small lime (acid)
1/2 teaspoon ground cumin ("Mexican Flavor")
1 medium finely chopped onion (vegetable/flavor)
1 28 ounce can of diced tomatoes (vegetable)
5 cloves finely chopped garlic (vegetable/flavor)
4 teaspoons sugar or non-sugar substitute (e.g., 2 pkgs. aspartame) (added
sweet)
to taste - salt and pepper
Blend all ingredients in a food processor. Do not puree. Cover. Chill.
Serve.

Examples of Gourmet-O-Matic tm salsas you can make using this simple worksheet:
Basic Fruit Salsa: sweetener, cilantro, fruits, garlic, green bell pepper, jalapeno, lime juice, onion and red bell pepper.
Citrus-Cilantro Salsa: cilantro, citrus juice, jalapeno, onion and tomato.
Cranberry Salsa: sweetener, cranberries, ginger, jalapeno, mint leaves and scallion.
Cucumber Salsa: cucumber, cilantro, jalapeno, onion and tomato.
Hot Tomatillo Salsa: cilantro, garlic, habanero pepper, lime juice, onion and tomato.
Jicama Salsa: green bell pepper, red bell pepper, jalapeno, lime juice and onion.
Mango and Black Bean Salsa: cilantro, black beans, garlic, jalapeno, lime juice, mango, onion, tomato and white vinegar.
Mint and Onion Salsa: sweetener, garlic, ginger, jalapeno, mint leaves, white vinegar and sweet onion.
Papaya Salsa: sweetener, apple cider vinegar, jalapeno, lemon juice, papaya and tomato.
