This Guide is for demonstration purposes and not exhaustive since there are many more substitutions you can make for the various ingredients. For a more complete listing of ingredient substitutions, go to The Gourmet-O-Matic tm Ingredient Substitutions page.

Even though all of the many substitutions for the different types of ingredients have not been included, using this simple worksheet, you can make hundreds of different chutneys with gourmet flair.

Examples follow the worksheet.

Remember the basic chutney equation:

Chutney = Acid + Fresh, leafy things + Hot + Flavors + Vegetable or Fruit +/- Added Sweet

For this worksheet, oil is added as an optional flavoring and to demonstrate a variation on the representative chutney theme. To get the texture you desire, you can add a small amount of water to the chutney.

Here, again, is a representative chutney recipe:

Lotsa Herbs Chutney

2 tablespoons lemon juice (acid)
1/4 cup chopped cilantro leaves (fresh, leafy things)
1/2 cup chopped mint leaves (fresh, leafy things)
1/2 cup parsley sprigs chopped (fresh, leafy things)
1/4 teaspoon cayenne pepper (hot)
1 teaspoon hot pepper sauce (hot)
1 medium onion, minced (vegetable)
1 tablespoon dried thyme (flavors - spice)
1 tablespoon dried oregano (flavors - spice)
2 teaspoons sugar or non-sugar substitute (e.g., 2 pkgs. aspartame) (added sweet)
to taste - salt and pepper

Blend all ingredients. Let sit one hour. Serve.

To use this worksheet, simply check the ingredients you want to combine and then combine them. Easy or what?

Examples of Gourmet-O-Matic tm chutneys you can make using this simple worksheet:

Almond-Cilantro Chutney: cilantro, jalapeno, lime juice, orange juice, red bell pepper and slivered almonds.

Apple Chutney: Granny Smith apples, cinnamon, hot red chili peppers, lemon juice and onion.

Banana Chutney: bananas, date sugar, hot red chili peppers, cider vinegar, onion, cinnamon, mustard powder and ginger.

Beet Chutney: beets, carrots, orange juice, cilantro, cumin, hot red chili peppers and peanut oil or walnuts.

Cilantro-Mint Chutney: sweetener, cilantro leaves, cumin, garlic, ginger, hot green chili peppers, lemon juice and mint leaves.

Cranberry Chutney: sweetener, cranberries, red pepper flakes, ginger, mustard seeds, orange, red onion and white vinegar.

Cucumber Chutney: cucumber, red chili peppers, mint leaves, onions and white wine vinegar.

Mango Chutney: cumin, mangoes, ginger, red and green chili peppers, lime juice, mirin, orange juice, red bell peppers and red onion.

Mint Chutney: sweetener, mint leaves, red chili peppers, scallions and white vinegar.
