Most foods are naturally acidic. This means that their pH is less than 7.0.

The lower the pH, the more acidic the food.

If you look below, canned green asparagus has a pH of between 5.2 - 5.32, while canned acidified artichokes have a pH of between 4.30 - 4.60. Canned green asparagus is less acidic than canned acidified artichokes.

In terms of flavor, more acidity means more sourness.
